The Shuck garden is overflowing with green tomatoes that will never ripen since the temperature is 50-60 now. What to do? Make them into cupcakes. I used Paula Deen’s Green Tomato Cake Recipe and a less sweet cream cheese icing recipe that I got here. It was a little thick, so I thinned it out with a bit of yogurt. They weren’t very pretty, but I think turned out tasty!
