I’m thinking about making 3 flavors for cupcake camp: Caramel Popcorn, French Toast and Drumstick. Caramel Popcorn is fairly easy. The French toast cupcake is fairly easy. The icing can be made a couple of days ahead. Drumstick has a few steps, but I’ve had some practice, so hopefully it will be pretty quick. Most importantly, I will have a couple of volunteers to help with decorating and garnishing.

I was just given a ‘cup cake’ mold, for a ginormous cupcake. It’s actually just a cake shaped like a cupcake but I digress… Any suggestions for waht I should try?
It seems to have a piece I can place in the middle as it bakes to allow for filling later. I’ve been through some of your recipes and want to try them all. just thought I would ask an expert which would be the best to try first up.

You can never go wrong with a GINORMOUS chocolate cake filled with some chocolate ganache and glazed with the same.
Just make sure you have some milk or coffee handy to wash it all down with. (Just realized that I didn’t post the recipe for Mocha Truffle!)
OR Carrot Ginger is fab also and would remind ME of my large carrot wedding cupcake….It’s almost MY anniversary, so maybe you should celebrate with Carrot cake.

Ooh I love carrot cake! I never thought of that… I did buy a packet mix today that had pink icing on a plain cake but only because it was for the pink ribbon charity and that’s a cause close to me.
I”m gonna save that for later and do carrot (minus ginger – I don’t do ginger)! Very good idea Mrs S 😀 And will gladly send a photo… assuming it works lmao!
