      • Happy Birthday to Me!

        May 1st

For my birthday lunch, Mr Shuck and I went to Jhanjay Vegetarian Thai Cuisine in Wallingford, which just happens to be less than a block away from Trophy.  I couldn’t be that close and not at least see what was available today, right?

I love a good margarita and this was pretty tasty.  Unlike most Trophy icings, the tequila lime butter cream wasn’t overly sweet and was very fluffy and light.  The lime cake had a great citrus flavor, but was a bit dry and very crumbly.  I wish I had taken a picture of the crumbs all over my shirt.  The cake was topped with a tiny bit of salt which added a little something extra.  I’m willing to ignore the dry cake since the icing made up for it.  Delicious!

      • Double Shot cupcake at Trophy

While at Trophy to check out the Boston Cream Pie cupcake, I was distracted by the Lighthouse Coffee Roasters cupcake display.  I ended up taking a Double Shot cupcake too.  (What goes better with Boston Cream Pie than coffee?)   Other coffee options were the Lighthouse Latte, an  espresso cupcake with vanilla buttercream rolled in French coffee sprinkles and the Mocha, a chocolate cupcake topped with espresso buttercream and French chocolate and coffee sprinkles.   I thought the Double Shot was the prettiest, so that’s how I chose….

Eating this cake was like having a latte.  The cake was moist and dense.  The icing was creamy and not overly sweet.  Both were full of coffee flavor.  Afterwards, I had coffee breath.   I LOVED THIS CUPCAKE!  I wish they weren’t going away soon… I just hope it doesn’t keep me up tonight…

These yummy cupcakes are only available until the end of October, so get in there soon if you want to try them!

        Boston Cream Pie from Trophy

We ventured to Trophy in Wallingford today to check out the Boston Cream Pie cupcake.  (Liking Trophy on Facebook made for an evil morning when they posted these.)   Another plus….we ended up trying a new vegetarian restaurant, Jhanjay Thai, which was excellent.   It’s about 1/2 a block down 45th from Trophy.

I think I prefer custard in a Boston Cream Pie, but the pastry cream in this cupcake was good.  The cake was a fairly dense vanilla, filled with the pastry cream, then dipped in dark chocolate.  I was happy with it and would eat another one if I hadn’t already canceled out my workout with this one.

      • Last bit of gluten filled goodness… for awhile…

So… I am going on a 3 week vacation from gluten starting today.  I had my last bit of gluten filled goodness at Trophy on Monday and it was wonderful!

        Strawberry Cheesecake from Trophy

Again, I apologize for the iPhone photo.

I haven’t been to Trophy for a while.  I was happy to see a cupcake flavor available that I had never tried before.   The strawberry cake sat atop a graham cracker crust and was capped with a strawberry cream cheese icing.  (I have seen this before…) The cake didn’t have much strawberry flavor, but it was moist and the crust added a great crunch.  The icing was creamy with a natural sweetness from the strawberries and a bit of tartness from the cream cheese.  The combination was heavenly.  The only aspect of this cupcake that I didn’t enjoy was the heart sprinkles.  While cute, they were a little hard and didn’t add anything to the flavor.

I would go out of my way for one of these cupcakes…assuming that I don’t have to remain gluten free.

So…L is going to be for Lemon Meringue.  I decided this a few weeks ago.  I bought the lemon curd.  Its sitting on my kitchen table.  I got my plan together and then things came up…and I haven’t been able to bake.

This morning, Trophy’s Facebook status was

It’s Pina Colada day aaaaand Lemon Meringue (made especally for my friend Kelley Moore’s new show “So Much Moore”). Lemon Meringue is filled with Lemon Curd and topped with Toasted Marshamallow Meringue, it is so incredible!

By the time we got there at 1pm, University Village was out.  Wallingford was on the way home, so we stopped in there as well.  No lemon meringue.  I might add that there were a few steps involved to find this out.  OUCH!

I suggest updating your status when you run out.  Maybe you were busy.  I forgive you this time.

      • Other stuff at Trophy

Lots of stuff to look at at Trophy over the weekend.  I don’t think I’d eat these, but I’m sure kids would love them.  I don’t really like the idea of biting into Johnny Depp’s face…probably tastes like smoke.   I would like to know how they get the tops so nice and flat.  I will be making some “Bite Me” cupcakes in the near future, so I need to work on my decorating skills.

A little sign indicates that the below cupcakes are special order only.  I LOVE the colors.

In the wedding display, I spotted this cake topper.  Very Cute!  (I like my flying pigs better, but I would have considered this.)

      • Stroop Waffle at Trophy

        Mar 6th

First of all, the weather was AMAZING in Seattle today.  Sunny.  High 50’s.  Perfect day for cupcakes, right?  (Okay, so almost any day is a good day for cupcakes….)

After the lunch buffet at Chutney’s, Mr Shuck and I wandered upstairs to Trophy for a peek at their offerings.  Specials today were Stroop Waffle, Chocolate Guiness Stout, and Chocolate Hazelnut.  I chose the Stroop Waffle, which I thought was going to be waffle flavored, so I was expecting some maple syrup or something.  What I got was a vanilla cupcake topped with caramel buttercream, caramel drizzle and a bit of waffle cone.  After I got home and Googled “Stroop Waffle” and discovered that it is a waffle shapped cookie filled with caramel, the flavorings made more sense.  I also recalled eating almost a whole bag of these delicious cookies which someone from work had given me.

        I digress….back to Trophy….

The vanilla cake of this cupcake was delicious.  Normally, I’m not that crazy about Trophy’s cake, but this was wonderful.  It had an especially big “muffin top”, so the edges were really crispy where it touched the baking pan.  Delightful.

Then there was the icing… Trophy’s icing is typically too sweet for me.  When you add CARAMEL to their already too sweet butter cream, it becomes deadly.  Mr Shuck only had a tiny taste and stated that it reminded him of eating a sugar cube.   If there is any doubt how I felt about the icing, the below photo is of my plate before I put it into the bus pan.

My rating: Cake ♥♥♥♥(the best cake I’ve ever had at Trophy).  Icing: ♥.  Overall Rating: ♥♥.   I probably wouldn’t purchase this again.  I’d eat it if it were free, but I’d leave the icing on the plate again.

        Jan 2nd

Today Mr Shuck and I ventured over to The Bravern in Bellevue and stopped by Trophy.  The available flavors for today were:  Carrot Walnut, Lemon, Triple Coconut, Chocolate Hazelnut, and Chocolate Peanut Butter.   Since I love Nutella®, I picked Chocolate Hazelnut.   This was a typical Trophy cupcake.  The cake was of adequate quality with a moist texture and a moderate chocolate taste that was neither overpowering nor particularly inspired.  The addition of crushed hazelnut gave this cupcake an added crunch that made it more agreeable to my palette than it probably would have been otherwise.  The icing was very sweet, as is the case with most cupcakes from Trophy, but here the sweetness was nicely tempered by the aforementioned inclusion of Nutella®.  Rating: ♥♥♥ .

Today we visited Trophy.   Mr Shuck had a Chai Cardamom (♥♥♥).  I had Chocolate Banana:  Banana cake with chocolate butter cream.  (♥♥♥).  The cake was just okay (usual for Trophy), but the icing was amazing:  creamy bittersweet chocolate.
