      • Excellent cupcakes from a doughnut shop?

        The answer to that:  Most definitely.

        Today I went to my favorite doughnut shop, Frost, which has reopened itself as a dessert bar.

        I’ve been really excited about the opening and was very disappointed last week when it was postponed due to “contractor issues”.  Today was their “soft” opening and I met some friends there after work.

        It’s been a long time since I had an amazing cupcake…

        Milk Chocolate & Salty Butterscotch Vanilla cake filled with butterscotch, topped with milk chocolate/butterscotch Italian buttercream, butterscotch, and Saltworks Snowflake® sea salt.

        I love Italian buttercream since it’s silky and not overly sweet, but the icing on the above cupcake didn’t have a distinctive chocolate/butterscotch flavor.  However, the cake itself and the butterscotch filling were so flavorful that the icing wasn’t even necessary.  One of my favorites!

        If this cupcake was supposed to be filled, this one must have been looked over…it’s highly possible since it was missing the sugar shard as well.  This was such a good cupcake that I didn’t miss either of them.  The cake was “super moist” as promised.  The smashed up caramelized sugar garnish added a really nice texture.  Also an excellent cupcake.

        My only regret on this visit is that I ended up trying 2 vanilla cakes.  I have a salted caramel iced chocolate one in my possession, but I must wait for my blood sugar to go down a bit before I try it.

        If you are in the Mill Creek, Washington area…go to Frost!  If you are in the Seattle area…it’s worth the drive!  I loved their doughnuts and now I love their cupcakes!

        My friend Mrs Smith was in town from the South last week.  On her list of “things to do in Seattle” was “take a ferry somewhere”, so we went to Whidbey Island.    The day was absolutely beautiful: sunny and hot for Seattle (mid 70’s).  We wandered around Langley for a bit and had lunch at Useless Bay Coffee Company, which turned out to be very vegetarian friendly (for me) and gluten free friendly (for Mrs Smith).  At the Whidbey Island visitor’s center, we picked up a flyer for Whidbey Cupcakes, so with high hopes of gluten free goodness, we went there for dessert.

        Unfortunately for Mrs Smith, the cupcake cafe had run out of their Choochokam cupcake, a gluten free Ghiardelli chocolate cake topped with Madagascar vanilla and organic chocolate butter cream, so she ate some M&M’s while I had my cupcake.

        Unfortunately for me, I might have chosen the wrong cupcake.  I decided on the Double Bluff: a Ghiardelli chocolate butter cake topped with a caramel butter cream frosting and garnished with black Hawaiian sea salt, caramel drizzle, and a Dove caramel candy.  The frosting was quite delicious.  It had the silky texture of a meringue butter cream and the sea salt added  a nice salty contrast and a little crunch.  The cake, however, was not so delicious: it was very dry and crumbly.  I was disappointed.   I’ll try a different flavor if I’m ever in the area again…

      • Cake Envy

        Thanks to Mr Tzau for bringing me a cupcake from Cake Envy in Greenlake. I took no pictures as I was at work. It was pretty. It was delicious. Moist almond cake, which apparently contained ground almonds. It was very light and flavorful and the icing, which seemed to be a vanilla Italian meringue butter cream, was delicious. Cake Envy is sustainable, all natural and organic. I am looking forward to visiting the shop!

      • Stuffed Cakes, West Seattle

        There’s a new cupcake shop in West Seattle!  (Editor’s note: I didn’t realize that I never published this post…not so new anymore…and not in my neighborhood.)

        Stuffed Cakes is located on 35th Ave SW between Henderson and Barton.  It’s conveniently located between a new fish and chips shop (West Seattle Fish House) and a coffee shop.  It is also blessed with 3 parking spaces out front (one of them for loading/unloading), so it seems like it will be easy to stop in and see what’s available.

        I stopped in yesterday (for their soft opening) and picked up a few cupcakes.  Hopefully when they get busier, they will have a larger selection.  Right now, they are just selling whatever flavors they may have had a special order for.  There were 3 choices available and I bought one of each: a gluten free Mexican Chocolate, an Orange Dream, and Nothing Rhymes with Orange.

        I wouldn’t have known this cupcake was gluten free if I hadn’t been told.  (Actually, I forgot which one the owner said was gluten free and had to call back and ask!).  The chocolate cake was fluffy and moist with just a hint of cayenne.  The chocolate could have been a little bit stronger, but I could have eaten the cake by itself.  The icing had a distinct cinnamon flavor which wasn’t overpowering and it was light and not overly sweet.  I would go back for this cake again!

        This cupcake wasn’t my favorite, but it was good.  I don’t really care for the orange/vanilla combination, but that’s a personal preference.  Mr Shuck really liked it.  The tie-dye styled icing was attractive and was definitely orange flavored.  The cake was moist and had a nice texture.

        This cake was essentially the same as the other orange, with the addition of bittersweet chocolate ganache in the center.  I would have been happier with a little more ganache (Who doesn’t love more chocolate?!).  I think Mr Shuck would ask for one again.

        I’m excited about this new shop in my neighborhood.  It’s a plus that it’s on the right-hand side of the road on my trip from home to Target.  There is a little strip for parking.  AND most importantly: They have really good cupcakes!

        This past weekend Mr Shuck participated in the Seattle to Portland Bicycle Classic, a 202 mile bike ride.  Being more sensible, I drove down.

        While we were in the Portland area, we stopped by the Bridgeport Village Mall in Tualatin/Tigard, Oregon.  The main reason for the stop was to visit Sweetest Thing Cupcakes which has a kiosk there.

        When we entered the store, we were greeted by a delicious blast of the aroma of butter cream and cake:  a delicious first impression.   I was also glad that there were a lot of choices:  Snickers, Chocolate/Raspberry, Chocolate w/ Vanilla Icing, Vanilla w/chocolate icing, Vanilla/Vanilla, Chocolate/Chocolate, Snickerdoodle., Chocolate Strawberry and Red Velvet.  They also had one of the most unique cake treats I’ve seen (although very environmentally unfriendly):  Cupcake PushUps.

        The shop had 3 different flavors of PushUps available and I chose Peanut Butter Marshmallow.   Theoretically, I think PushUps are a great idea, but practically they didn’t work so great.  It was next to impossible to get a balanced bite.  I had to eat the icing, which was good but EXTREMELY sweet.  After the icing, I got a layer of cake, which wasn’t dry exactly, but very crumbly and messy.  Next I got a mouthful of marshmallow filling, also extremely sweet.   Being able to have a combination of layers would have tempered the sweetness of the creamy components and possibly held the cake together better as well.   From a hippie standpoint, it’s a lot of plastic to be thrown away for such a small a dessert.

        On the way back to Seattle, I dug into my cupcake.  I had chosen the Strawberry Fields cupcake, which was advertised as a strawberry/chocolate chip cake filled with strawberry and topped with chocolate ganache.  It came packaged in a Chinese to go box, which kept it safe for the journey.

        This was a very tasty cupcake.  I didn’t get a lot of strawberry flavor from the cake, but it was moist and the chocolate chips gave a bit of texture.  I wasn’t thrilled with the strawberry jam in the center:  it was a bit sweet and “Smuckers”-ish.  The ganache on top was nicely bitter and delicious.  I don’t even remember eating the fondant flower garnish, so it wasn’t as off putting as I find most sugar garnishes.

        Granted, my sample was pretty small, but I was impressed overall with this shop.  I’ve had a few visits to other shops lately that I didn’t want to even comment upon.  (If you can’t say anything nice…).

        I would go back to Sweetest Thing if I were in the area.  I’d be interested in visiting the original shop where the baking is done, but it’s about 40 minutes south of Portland.  Maybe one day….

        On a tangent:  We also visited the Good Food Here food cart pod at 43rd and Belmont in Portland.  I was excited to see that my old cupcake friend, The Sugar Cube PDX had moved from Mississippi and Skidmore.  The Sugar Cube is home to one of my all time favorite cupcakes, Chocolate Caramel Potato Chip.  On this trip, I tried their Chocolate Chocolate Bread Puddin’ which was described on their website as “An ooey gooey journey to the peak of Mt. ChocoGASM. Served warm and topped with Nutella cream, salted caramel and Freddy Guys toasted hazelnuts.”  They did not lie.  It was fabulous.  It was beautiful.  I wish I had taken a crappy IPhone photo before I devoured it.  I also love that they serve on mismatched china and trust us to bring it back to the cart and not steal.  I loved my plate and pondered taking it with me before returning it to the cart.   I have visited the Sugar Cube almost every trip to Portland… they were closed once when we attempted.  I will definitely return.

      • Better late than never… HoneyMoon Bakery, Rome, GA

        Mr Shuck and I traveled back to Georgia recently and got a chance to revisit the Honeymoon Bakery in Rome.   I was glad to see that they still had mini cupcakes so I could try a few!

        I tried the Strawberry Mini first.  The icing was fluffy and full of fresh strawberry flavor.  It sat atop a moist strawberry cake and was garnished with a sugar flower that I didn’t really taste.  (Not tasting the decor is typically a good thing.  Sprinkles and sugar flowers aren’t typically the most delicious part of a cupcake.)  I would have liked to have had more information regarding the details, like was it a meringue butter cream or American butter cream, but my email for more information was returned with only the barest of information.

        Italian Creme Cake mini from Honeymoon Bakery

        I’ve had the Italian Creme cake from Honeymoon Bakery before.  It wasn’t as delicious as I remembered, but it was NICE.  The cream cheese icing was tangy and full of nutty goodness.  The cake was just slightly dry but not crumbly at all.  I’d buy it again.

        The Sour Cream fudge bite made up for the small amount the Italian creme cake was lacking.  The icing and cake were both delicious.  Both were rich and fudgy.  This would definitely satisfy a chocolate craving.

        If I lived in Rome, I’d probably drop by here pretty frequently.  I had samples of cookies which were chewy and flavorful.  I also split a Ladybug mousse cake with my mother in law which was amazing.  I think she might have stopped by for another one since I’ve left.  I wish I had photographed it because it was incredibly cute.   If you live in Rome, it’s definitely worth a trip downtown!

      • Sugar Rush Bakery @ Coffee to a Tea

        Mr Shuck called me while I was at the grocery store last weekend to let me know that Sugar Rush bakery was having a special cupcake to benefit Japan Earthquake relief.  I thought I should check it out.  Of course, I got a couple other flavors as well…

        I think that this was a vanilla cupcake with vanilla icing.  I didn’t get any other flavors.  It was very cute, but bland.  The icing seemed to be Italian meringue butter cream: very silky and smooth, not overly sweet.

        I think this was called “Bit of Bliss”…it seems like the closest one from their menu… I should have written it down.  The chocolate cake had nice chocolate flavor, but was a little dry.  The ganache it was dipped it was delicious and rich.  This one was my favorite.

        I wasn’t overly thrilled with the Strawberry Lemonade cupcake.  The cake was okay.  It was lemony and fairly moist.  The icing wasn’t good at all.  It was too sweet and didn’t have much strawberry flavor.

        Sugar Rush has decent cupcakes.  They aren’t something I’d go far out of my way for, but then it’s only a mile from my house.  They have good coffee and a play area for the children, so it’s always pretty busy.  It seems like a nice place to hang out.

      • JaCiva’s Portland

        On our recent Portland trip, we made a stop at JaCiva’s Bakery.  We tried the first of their cupcakes when we stumbled upon them at a Portland grocery store last year.

        We made it to the bakery just seconds before a bus from an assisted living center unloaded into the building, so I didn’t get to spend as much time inside as I would have liked.  It got very crowded very quickly.   They had some amazing looking chocolates I wish I had been able to photograph: a chocolate toothbrush, a big chocolate cupcake that you could fill with cookies, and chocolate tennis rackets.

        There were only 2 cupcakes available: The 7th Heaven cupcake, which we tried before, and a peanut butter chocolate cupcake.

        I apologize to the Hotel Modera for dropping chocolate bits all over the floor when I unpeeled this monstrous cupcake.  It was very similar to the 7th Heaven cupcake: chocolate cake topped with peanut butter mousse then dipped into melted chocolate.   The mousse was wonderful: fluffy and nutty.  The cake was a little dry, but it had a nice texture otherwise.  The cupcake was WAY too big and I grazed on it for the rest of the evening.  The hard chocolate coating was very messy since it came down over the edge of the liner.  (No, I did not get any chocolate on the white comforter on the bed….just all over the floor… and on the bottom of my socks… and on my jeans…)

        I would love to try some chocolates from JaCiva’s.  Hopefully we will have better timing the next time we’re in Portland.

      • New Cupcake Shop

        On the way home from Portland, Mr Shuck and I made a small detour off of I-5 to try out a new cupcake shop.

        I had a few problems with the shop itself.

        • There were only 4 flavors.  I was told the other flavors weren’t “out yet”, which seemed a little strange for 2pm on a Monday.   One of them was red velvet, so that left only 3 flavors I could potentially eat.  Another flavor had bacon on it, so the vegetarianism eliminated that one.  The 3rd flavor had bright green icing, which eliminated it because of my dislike of artificial colorings.    I was left with chocolate, which I think was described as “truffle-y”.
        • There were no labels on the cupcakes, so the counter person had to describe each one to me.  She was extremely pleasant, but if there had been a line… she would have had to repeat herself over and over needlessly.  I don’t expect anything fancy: eraser board or chalk board is fine and relatively inexpensive.
        • The boxes didn’t have inserts to keep the cupcakes from falling over.  I understand this is a new store and maybe they didn’t want to invest yet…If I had waited until I got home, the cake would have been all over the place.

        Positive points:

        • They had minis available, although in only 1 flavor…guess which one?   This probably turns out to be a neutral point because it’s a problem point to me that there was only 1 flavor of minis.  The advantage of minis is that you can try a couple of flavors.
        • They also had mini pies, although just apple.

        The cupcake:

        Yes, I photographed and ate this in the car....

        I don’t remember how this cake was described other than “truffle-y”.  (If there had been a sign, I’m likely to have remembered the details…)  A favorable description would be “dense chocolate cake topped with fluffy chocolate butter cream and garnished with a truffle and hot pink decorations.”   My actual description:

        The cake was fine.  It seemed like a German chocolate pound cake: very light chocolate flavor, very dense.  It hadn’t risen very much and the liners should have been filled up more so the cake would come up higher.  The cake was about 1/2 an inch below the level of the liner.  This made it extremely easy to remove the paper though…

        The chocolate candy on top wasn’t very good.  It seemed like a truffle, but perhaps not a very good truffle… But then, for $2.25, is anyone really going to top a cupcake with a truffle that costs more than a few cents?

        I didn’t really like the combination of hot pink accessories with the leopard print liner.  Maybe it’s stylish and haute cupcake couture, but I thought it was a little gaudy.  I’m opposed to sanding sugar in general because it doesn’t add to the flavor.  The other little hot pink things seemed to be chocolate candy covered sunflower seeds, but I’m not 100% sure about that.  They added crunch, I guess.  They might have also added salt…

        The icing, while fluffy and smooth, was extremely SALTY.  I’m not sure if they use salted butter instead of unsalted or if this was intentional.  It was a little much.  I can’t tell you if the icing was richly flavored with chocolate because I couldn’t taste anything besides salt.

        I don’t want to be negative about a new business, so I’m not posting the name… If you REALLY want to know, leave a comment and I’ll email you…

      • S’mores from Pinkabella

        So… we were over at the Container Store at Lincoln Square in Bellevue when I remembered that Pinkabella had opened up a store at Bellevue Square, right across the street.  It seems so simple, but really we had to go upstairs and over the skybridge then detour through Crate and Barrel for a minute, then walk through Macys, find a directory and figure out what 3CC meant.  3CC means 3rd floor, Center Court.  The only other things I was aware of on the 3rd floor were the kid’s play area and Gymboree.  That’s probably a good place for a cupcake stand!  We found our way there and I picked out a S’mores cupcake.  We found a place to downstairs away from all the children.  The older couple near us were amused by my photographing a cupcake before I ate it.  The woman said that I should take a photo to make it last longer since I probably paid “a pretty penny” for it.

        Trophy still has the best S’mores (aka Chocolate Graham Cracker) cupcake.  The chocolate cake on this was good.  It had very rich chocolate flavor but was a little crumbly.  As I sat on the bench, I seriously wished I had a plate and fork so I didn’t make a HUGE mess of myself.  There was a tiny bit of graham cracker crumb sprinkled across the top of the cake under the icing, which was over-the-top sweet.  I didn’t really get “marshmallow”, but what does marshmallow really taste like besides “sweet”.   I was hoping that when I tasted the cake and the frosting together, the darkness of the chocolate would balance out the sweet of the frosting.  It wasn’t the case.  When I tasted them both, all I got was SWEET.  The frosting was so overpoweringly sweet that I no longer tasted the cake.  It was so sweet, I felt a burning in the back of my throat.   I wouldn’t have this one again unless I had some insulin nearby.

        I would like to know how to make the huge ball of icing on top….Maybe I need a bigger tip??
