        Mr Shuck and I traveled back to Georgia recently and got a chance to revisit the Honeymoon Bakery in Rome.   I was glad to see that they still had mini cupcakes so I could try a few!

        Strawberry Mini from Honeymoon Bakery

        I tried the Strawberry Mini first.  The icing was fluffy and full of fresh strawberry flavor.  It sat atop a moist strawberry cake and was garnished with a sugar flower that I didn’t really taste.  (Not tasting the decor is typically a good thing.  Sprinkles and sugar flowers aren’t typically the most delicious part of a cupcake.)  I would have liked to have had more information regarding the details, like was it a meringue butter cream or American butter cream, but my email for more information was returned with only the barest of information.

        Italian Creme Cake mini from Honeymoon Bakery

        I’ve had the Italian Creme cake from Honeymoon Bakery before.  It wasn’t as delicious as I remembered, but it was NICE.  The cream cheese icing was tangy and full of nutty goodness.  The cake was just slightly dry but not crumbly at all.  I’d buy it again.

        The Sour Cream fudge bite made up for the small amount the Italian creme cake was lacking.  The icing and cake were both delicious.  Both were rich and fudgy.  This would definitely satisfy a chocolate craving.

        If I lived in Rome, I’d probably drop by here pretty frequently.  I had samples of cookies which were chewy and flavorful.  I also split a Ladybug mousse cake with my mother in law which was amazing.  I think she might have stopped by for another one since I’ve left.  I wish I had photographed it because it was incredibly cute.   If you live in Rome, it’s definitely worth a trip downtown!

      • U is for Union Square Cocktail

        “U” probably won’t be as difficult as some other letters remaining: V and X primarily.  (If anyone out there knows of any dessert, candy bar, or any other dish that starts with either of these letters, please leave me a comment!)

        My original thought was U-No bar, but then I discovered that they don’t taste very good.  A reader suggested Upside Down Cake, but a very popular cupcake shop (Trophy) does these so I didn’t want to go with that either.  After extreme googling, I discovered the Union Square, a cocktail created by a famous bartender using New Amsterdam Gin.  I thought maybe it didn’t really exist, but then I found another reference.  So if it exists twice on the internet, it’s real, right?

        If there is a (stolen) photo, then it must be real!

        The ingredients for the cocktail:

        • 2 oz New Amsterdam Gin
        • 2 strawberries
        • sprig of basil
        • 1/2 oz fresh lime juice
        • 1/2 oz fresh lemon juice
        • 1 oz agave nectar
        • 1/2 strawberry for garnish

        The strawberries are muddled with the basil until thoroughly crushed.  Then the other ingredients are added and the whole mess is shaken and poured over ice.  If anyone out there likes gin, let me know how this tastes.

        I started off with Sprinkles strawberry cupcake recipe and added a little lemon and used agave nectar for part of the sugar.  I was going to substitute it all, but after tasting the agave (not tasty), I used 1/2 sugar and 1/2 agave.  I swear I had lemons in my cart at the grocery store, but somehow they didn’t make it into the kitchen with me, so I used RealLemon juice.

        • 1 stick butter, room temperature
        • 1/3 cup strawberry puree (from frozen strawberries)
        • 1/2 cup sugar
        • 1/3 cup agave nectar
        • 3/8 cup milk (I actually used Horizon vanilla flavored milk as that’s what I had on hand)
        • 1 tablespoon-ish lemon juice
        • 2 egg whites
        • 1 whole egg
        • 1 & 1/2 cups flour
        • 1 teaspoon baking powder
        • dash of salt

        Cream the butter and add the sugar, mixing until light and fluffy.  Meanwhile,  in another bowl, combine the flour, baking powder and salt.  In a third container, combine milk, strawberry puree and agave.  Add egg whites and whole egg one at a time to butter mixture and mix until just combined.  Add 1/2 of the dry ingredients, then the milk mixture, then the rest of the dry ingredients, mixing just until combined after each addition.  I added the lemon juice to taste at the end.  (So far I haven’t died from eating raw cake batter.)

        Scoop into lined mini muffin tins and bake for 14 minutes (ish) at 350 degrees.  Allow to cool for 10 minutes in the pan and the rest of the way on wire racks.

        To make the icing, I essentially used the same icing as I used for the Tiramisu cupcake, except I infused the cream with basil.  I figured basil is a leaf.  Tea is a leaf.  I could impart basil flavor without having a leafy icing by making a basil/cream tea.  I heated to a simmer 1/2 cup of cream with a few basil leaves added.  I let it sit while I made the cupcakes, then fished out the leaves.  While the cupcakes cooled, I allowed it to cool in the frig.  Once it was chilled, I added it to a container of mascarpone (8 ounces) and roughly 1/2 cup powdered sugar.  After I whipped it together, I added a tiny squirt of lime juice to taste.   I piped it onto the cupcakes using the tip with a huge hole and garnished 1 of them with a basil leaf.  (Unfortunately, my bunch of basil didn’t contain very many small leaves.)

        I think this turned out to be a very nice cupcake.  All of the flavors are very subtle…just a little hint of strawberry, basil and citrus.  The icing is very creamy and not too sweet.  It’s definitely not a Kiddie Cupcake, even though it’s tiny.  I think this would probably be very nice for afternoon tea.

        So, I haven’t been baking lately for various reasons.  I have been able to eat, though.  Yesterday, we ventured out to Pabla Indian Cuisine to try out their vegetarian buffet and afterward stopped by Common Ground Coffee and Cupcakes, just a few blocks away, for a cupcake (or two).

        We were so stuffed from lunch that we got the cupcakes to go, but the shop seemed like it would be a pleasant place to stay awhile: free wi-fi, coffee, toys for the kiddies.

        It was a little warm out, so I was excited that my cupcakes (Strawberry Fondue and S’mores) made it home intact.   I dug into the strawberry cupcake first.  It was cute.  I liked the fact that the strawberry stem was piped on using icing.  I don’t like inedible objects on cupcakes.   The cake was moist and packed with strawberry flavor.   The icing was fine, but I didn’t discern a specific taste to it.  I later learned from the website that it was supposed to be a strawberry butter cream.  It wasn’t pink, so if it had strawberry flavor, it was artificial.  It wasn’t overly sweet and it was nice and fluffy.   My rating:  ♥♥ 1/2.  I’d be willing to pay for this again if I were in the area.  I’d be more likely to try something new though…

        The second cupcake was okay.  The chocolate cake was moist, but the icing again had no distinct flavor.  The website says “marshmallow/graham cracker” for butter cream flavor, but I’m not sure if they meant garnished with a graham cracker.  After having amazing S’mores cupcakes from Trophy and New York Cupcakes, this was a bit of a disappointment.  My rating: ♥♥.  I’d eat this again, but I wouldn’t pay for it.

        The two cupcakes that I had from Common Ground were good, but not spectacular.  I’d be willing to try them again.  I wish that their website contained a little more information.  It didn’t really draw me to their store.  I like a little more description of flavors available.   That gets me intrigued about a specific flavor and ready to go and seek it out.

      • Strawberry Banana and Sweet Potato from Yellow Leaf

        We actually stopped by Yellow Leaf YESTERDAY.  I didn’t want to seem like the sort of person that would visit 2 cupcake places in one day, but apparently I am.   We’ve already established that I have a problem….

        Today’s choices:  Sweet Potato with Maple/Brown Sugar icing and Strawberry Banana.

        The reviews:

        Sweet Potato:  I am assuming since this is a beige cake and not an orange cake that Yellow Leaf used white sweet potatoes.  (An assumption that was confirmed with a quick email to Michael at Yellow Leaf.)  I think technically the orange ones are yams.  Overall, it was a nice cupcake.  It didn’t have any sweet potato or yam taste; It was a basic spice cake.  I had to concentrate really hard to taste the “maple” in the icing.  Maybe the brown sugar sprinkled over the top interfered.  Yellow Leaf’s cupcakes are typically pretty, but this is somewhat boring since it’s all beige.  Rating: ♥♥

        Strawberry Banana:  Strawberry cake filled with banana cream and topped with strawberry and banana icings.   The strawberry part of this cupcake was delicious.  The cake was very moist and had a “natural” strawberry flavor.  There were red specks in the cake and the icing, so I assume real strawberries were used.  The banana filling and icing had an artificial banana taste.  (I wouldn’t expect real bananas to be used since they might turn brown.)  Mr Shuck “really liked it” but it “almost had too much going on”.    My rating: ♥♥♥.  Mr Shuck’s rating: ♥♥♥ 1/2.

      • Twice in a week?

        So, I was at Yellow Leaf AGAIN today.   Wednesday will probably be my usual day for cupcakes since Mr Shuck is downtown.  The earlier visit was due to guests in town.  That’s how I am justifying this anyway.   That’s part of the whole addiction, right?  I’m not denying that I have a problem….

        Tiramisu:  Yellow cake with some liquor flavor that neither Mr Shuck nor I could identify.   Marsala wine is apparently traditional for tiramisu, but I don’t think I could recognize it anyway.   There was a tiny bit of espresso flavored filling.  The cupcake was topped with (I assume) a marscapone icing dusted with espresso/cocoa powder.  It was a good one!

        Vanilla Toffee:  As always, Mr Shuck and I loved the vanilla cake.  The scoop of icing is simple and rests on a nice crunchy layer on top of the cake, I assume from toffee chips sprinkled on before baking.  There is a great contrast in textures between the firm cake, the crunchy and almost sticky toffee chips and the silky icing.

        Strawberry Macaroon:  Coconut flavored cake with lightly flavored strawberry Italian butter-cream sprinkled with coconut flakes.  There was a bit of a strawberry cake layer, but I’m not sure if it was intentional or if the icing soaked in a little…

        Chocolate Cookies and Cream: Devils food cake with cookie bits dipped in chocolate topped with a scoop of icing and half a chocolate filled Oreo®.  Also a textural party going on between the crisp cookie bits and creamy icing.  Yellow Leaf’s chocolate icing reminds me of chocolate ice cream.
