        I made cupcakes awhile back for a coworker’s baby shower.  I had a couple of mishaps…

        Oily carrot cake that spread out all over

        I THOUGHT that I normally use Martha Stewart’s Ginger Carrot cake recipe…I made 2 pans of 12 then realized that this is a HORRIBLE recipe.  If I were a better baker, I’d know that 1 cup of oil in 12 cupcakes will produce GREASY cupcakes.  The instructions said to fill to the top, so I did…they spread all over the pan and I had to cut them apart.  YIKES!

        So…I started over with the correct recipe… and made some successful and tasty carrot cake cupcakes.

        Carrot Ginger Cupcakes with Cream Cheese Icing

        The second cupcake was a blueberry cheesecake cupcake.  I started off with graham cracker crumbs in the bottom… I would have mixed them with butter and made a harder crust, but I forgot until right before I was ready to put the batter in.  (I really don’t bake efficiently when I’m getting paid for it.  I think I stress out too much.)  I used a sour cream cake for the next layer and threw in some flour coated blueberries.  When it was done, I topped it with the same cream cheese icing used on the carrot cake and garnished it with some blueberry pie filling.

        They were a hit at the shower!  Angela is scheduled to be induced today.  Heres wishing that she and new baby Cole are healthy and happy.

        On the way home from Ikea, Mr Shuck and I were thinking about cupcakes.  I called Yellow Leaf (yes, I do have them in my cell phone) and was intrigued by the Boston Cream that was available today.  However, traffic on I-5 was starting to back up, so James suggested we try out the Columbia City Bakery.   So, we ended up avoiding traffic, broadening our cupcake horizons, and trying a new restaurant (Tutta Bella, also in Columbia City).

        Our cupcake selections:  Hazelnut (for me) and Carrot (for Mr Shuck)

        Hazelnut:  The icing was good: very ganache-y and reminiscent of Nutella®.  The cake, on the other hand….very dry.  It had nice hazelnut flavor, but was crumbly.  Rating: ♥ and 1/2

        Carrot:  Mr Shuck says, “It was fine.”  My little taste was dry: not as dry as the hazelnut cupcake, but still dry.   The cream cheese icing was not very flavorful either.  Rating: ♥♥

        The bakery was very crowded when we went by.   I liked the square cupcakes: different.  I also liked their cupcake carriers: upside down plastic cups.  I would probably give them another chance…if I’m in the area…which is likely since we LOVED Tutta Bella.

      • Cupcake Royale’s 5th Annual Cupcake Harvest Festival

        So, I don’t remember why I went to Cupcake Royale’s website. Yellow Leaf tweeted “licorice cupcake” to me.  It sounded gross, but got me thinking about cupcakes → Cupcake Royale is closest→ I was intrigued by their harvest flavors.

        Descriptions from the Cupcake Royale website:

        Caramel apple: delicious golden cake made with chunks of honey crisp apple from Tiny’s Organic farm plus sweet apple butter from Woodring farm, topped with our housemade caramel frosting.

        Pumpkin Maple: lightly spiced pumpkin cake made with organic pumpkin from Stahlbush Island Farm topped with delicious maple cream cheese frosting.

        Carrot Cake: our classic carrot walnut cake now made with fresh local carrots from Ralph’s Organics topped with rich cream cheese frosting.

        Salted Caramel: Chocolate cake Royale topped with caramel buttercream, Fleur de Sel and dark chocolate curls.  (Ok, this isn’t a “Harvest Flavor”, but the box was for 4 and an empty spot seemed sad…)

        I didn’t really feel like going out as I am technically sick, but I’ve been cooped up all day, so I thought a trip to the cupcake shop would be good therapy, especially since one of the flavors was Caramel Apple.  (Apple a day, you know….) I took it as a positive sign when I got the parking space RIGHT IN FRONT of the door.  I was up to a trip to the store, but not up to walking a block.  I also thought it was a positive sign when I saw the logo on the box:

        Cupcake Royale LogoI don’t really think that cupcakes are doing my booty (or my waistline) good, but they make my tummy happy (usually).

        So the results:

        Caramel Apple: I didn’t finish this cupcake.  Maybe I don’t like authentic tasting caramel, but the icing tasted like burnt sugar: bitter and sweet at the same time.  I didn’t like the texture of the cake either: too spongy and not a lot of flavor.  This cupcake wasn’t even visually appealing since it was all beige.  Maybe some sprinkles?  The little stick was cute, though.  Rating: 1/2♥

        Pumpkin Maple:  The cake was really good: very moist and flavorful.  The icing had definite maple flavor, but was a little grainy and overly sweet.  Very cute cupcake.  Colored leaf sprinkles give it a fun, cartoonish look.  Rating:  ♥♥ 1/2.  I’d purchase it again if I were at Cupcake Royale, but it probably wouldn’t entice me to Cupcake Royale.

        Carrot Cake:  Details to come.  To quote Mr Shuck, “It was fine: nothing to write home about” and the icing “was barely detectable, was that cream cheese icing?”.  Lots of walnuts added texture, but it was kind of dry.  I personally didn’t get any icing, so I’ll let him provide the rating:  ♥ and 1/2.  “I’d eat a couple of bites if it were free, but I wouldn’t pay for that.”  Not all that visually appealing either.

        Salted Caramel: details to come.  My first complaint is that the description says “Fleur de Sel” after the butter cream and before the chocolate curls.  Also, the photo online shows salt crystals on top.  There were no salt crystals.  I don’t think salt would have improved this any.  The icing was the same caramel as on the Caramel Apple, so I won’t go into it again.  I scraped it off and left it in the box, leaving Mr Shuck to ask, “EW!  What’s that?”  He also thinks Duncan Hines might provide better chocolate cake.  I thought the cake was dry, but I ate it.   The cake was ♥♥.  I’d eat it if I were hungry.  The icing is NO hearts.  I would avoid this icing.

        Summary:  I’ve only had a couple of Cupcake Royale cupcakes (and none since I discovered Trophy).   Since they keep getting voted “best cupcake in Seattle”, I thought perhaps I was mistaken in my opinion that they are inferior and I gave them another chance.  I won’t be wasting my money there again for another year at least.  I just ate a Reece’s cup to get the taste of the caramel icing out of my mouth.

        So the carrot ginger cupcakes seemed to be popular at work today.  I had reports that the cream cheese icing was a bit too sweet.  I can adjust that.  The candied carrot strips were a hit.  YAY!   The ones that sat overnight on the silicone mat on my counter actually dried quite nicely and were tasty by themselves today.  I need to get a screen or something to dry them on for better air circulation.

        Tonight I made a carrot ginger cupcake with cream cheese icing.  I attempted to candy some carrot strips for decoration, but don’t think I cooked them long enough.  I’ve never made candy before, so I’m not sure about how to do that….
